# Directions:

01 - Whisk together soy sauce, cornstarch, brown sugar, and red chili flakes in a small bowl until cornstarch dissolves completely.
02 - Heat sesame oil in a large skillet over medium-high heat. Add minced garlic and grated ginger; stir-fry for 30 seconds until fragrant.
03 - Add ground turkey to skillet. Break apart with spatula and cook until no longer pink, approximately 5-7 minutes.
04 - Pour sauce mixture into skillet, stirring to coat turkey. Cook 2-3 minutes on high heat until sauce thickens and becomes glossy. Add 1 tablespoon water if too thick.
05 - Stir in most chives, reserving portion for garnish. Remove from heat. Top with toasted sesame seeds and remaining chives. Serve over rice with vegetables.

# Expert Advice:

01 -
  • The sauce comes together in minutes but tastes like it simmered for hours
  • Ground turkey stays incredibly juicy with this glossy coating
  • You probably have everything in your pantry right now
02 -
  • The sauce will continue thickening off the heat, so pull it slightly earlier than you think
  • Ground turkey releases a lot of liquid. Let it evaporate before adding the sauce
  • Extra heat does not always mean more chili flakes. Try adding the sauce earlier in the cooking process
03 -
  • Double the sauce mixture if you love extra sauce on your rice
  • Pre-mince your ginger and garlic and freeze them in portion sizes for even faster prep
  • Use a microplane grater for ginger to avoid fibrous strings in your dish
